Fried Rice

2x Slices of Pork Belly

3x TBSP canola oil

5x BIG cloves of garlic 

2x shallots 

1x Birds eye chilli 

150g Prawns 

3x whole eggs 

3x Table Spoons sesame oil 

500g Day old Rice 

5x spring onions 

Soy sauce and salt to taste or MSG

This is legit fried rice,Its all about the pork prawn and egg. The holy trinity of fried rice.  If you don’t have day old rice a great hack is grab 2x packs of uncle bens plain basmati rice, microwave them and then chill them for 30 mins or so in the fridge. I have done this many a time after a few wines as a midnight snack and works a treat! 

Its quite important to get the order right so everything is cooked perfectly. You can do this with out a wok just make sure your pan had a thick base and can get nice and hot! 

Right ho! Pop a pot onto high heat with the canola oil, Dice your pork belly strips and pop into the pan with a bit of salt. The fat will start to render out. 

Finely chop your garlic, shallots and chilli. Add them into the pot. Cook until really fragrant. roughly chop your prawns and add them ins. Keep the mix moving in the pan. 

Crack your eggs and lightly beet them with a fork, push your pork and prawn mix to one side, add in sesame oil and a little salt then add in your eggs. Scramble them with a wooden spoon in the pan.

When scrambled turn it up to absolute max and add in your rice. Slice your spring onions and add them in, add soy and season with salt and a little more sesame oil if needed.
