Cheeky Crumpet!

250 g flour

5g salt

5g brown sugar

Pinch baking soda

300 ml warm milk

7g yeast 

200 ml warm water

These are super easy to whip up, they are fluffy and light! Great with smoked salmon or even just with a heap of butter.

Measure out the flour, salt, sugar and baking soda. Pop this into your stand mixer

Microwave the milk and the water until warm. Add in the yeast and let it sit for 5 mins or so.

Add this into kitchen aid bowl and whip the batter until combined. Cover and leave for an hour so it gets nice and fluffy.

Grab 2x ring moulds and butter the sides, pop them into a buttered pan on a medium heat. Pour the mixture into the mould, and cover with a lid.

when the top has changed colour and looks cooked remove from the ring moulds and flip to to toast the top. Add in a bit more butter if you fancy!
